Tuna Melt Cups

This is one of easy hors d’oeuvre recipes. You can also whip this up for a potluck party when you’re not in the mood to create complicated dish but do not want to resort to the lame mac and cheese. The Tuna Melt Cups is inspired by the Essential Finger Food cookbook. I sort of created this on one rainy afternoon while I’m wondering what to do with soon-to-be-expired wheat bread.


Tuna Melt Cups

Ingredients:
6 slices of wholemeal bread (this can vary depending on the size of bread you have)
1 can of tuna
1.5 tbsp melted butter
1 tsp black pepper
1 tbsp Mayo
1/2 cup Shredded cheddar cheese
1 tbsp dry bread crumbs

Method:
1. To make tuna topping, drain the can of tuna, put the content in a bowl, mix in the mayo, about a big pinch of the cheese and sprinkle with a freshly ground black pepper. Flake the tuna with a fork.
2. Use a roller pin to flatten each slice of bread.
3. Use a round cutter to cut the bread. Alternatively, you can use the empty can from the tuna to get the round shape by taking off the top part, clean and dry it.

Brush butter on the muffin cups tray
5. Push each piece of flattened bread into the cups. Brush butter on top of each bread.

Baked in preheated oven 350F for 10 mins until golden brown. Remove from oven.
7. Spoon in the tuna topping into the cups. Sprinkle with dried bread crumbs and shredded cheese.
8. Put back into the oven and bake for another 5 mins or until cheese has melted slightly.

Serve immediately. Makes 12 cups.
